I absolutely adore Marcus Samuelsson and his Granola Deluxe recipe, which is simple and delicious. The following recipe is the only one I have ventured to make and I was very happy with the results.
Ingredients:
1 cup rolled oats
1 cup packed light brown sugar
2 cups slivered almonds
1 tablespoon ground cinnamon
½ cup honey
¼ cup canola oil
½ cup coconut flakes
2 teaspoons salt (I used 1 teaspoon)
½ cup sun-dried cranberries
1 cup chopped bittersweet Mexican chocolate
½ cup raisins
Vanilla yogurt
Method:
Preheat the oven to 250° F (121°C).
In a large mixing bowl, add oats, brown sugar, almonds, cinnamon, honey, canola oil, coconut and salt. Mix well.
On a parchment-lined baking sheet, spread the mixture in a single layer.
Bake for 1 hour and stir every 15 minutes.
Allow mixture to cool, then, transfer to a large bowl and toss with the cranberries, chocolate, and raisins.
Serve with the vanilla yogurt.
Chocolate-laced granola for breakfast is a great way to start any day.
