Napoli: a Southern Italian city famous for its delicious pastries, ancient castles on the sea, and romantic love songs. But above all, it's most renowned for one circular, delicious dish: the pizza! In Italy, pizza is so important it is considered a protected food: it must be prepared in a certain way to bear the “pizza Margherita” label. This old-world tradition of making pizza can be found at only a few places in America, as the restaurants must follow the strict guidelines that Italy sets; fresh ingredients being first and foremost.

He is assisted in the kitchen by Shon who has been in training for over three years, waiting for the thumbs- up from Carmine to be promoted to "pizzaiolo" status.

If you have never tried a true Napoletana pizza, Carmine suggests you start with the original version of pizza Margherita. The pizzas are cooked in an Italian-made oven that reaches a temperature of 1000 degrees. The pizza takes one minute to cook and should be eaten fresh out of the oven, not ordered to go.
