Whether mashed, baked or roasted, people often consider potatoes as comfort food. It is an important food staple and the number one vegetable crop in the world. Potatoes are available year-round as they are harvested somewhere every month of the year. 

Whether it's a quick snack, a comforting side dish, or a family breakfast, potatoes are the perfect pick. A few surprising ingredients, like caramelized lemons in roasted potatoes or pesto in potato salad, give these easy potato dishes a quick upgrade.  Below is a classic recipe for potato gratin that will make you an instant potato fan (if you're not already).

Ingredients

  • 1 1/2 cups heavy cream
  • 1 sprig fresh thyme
  • 2 garlic cloves, finely chopped
  • 1/2 teaspoon ground nutmeg
  • Butter
  • 2 pounds Yukon Gold potaotes, peeled and cut into 1/8-inch thick slices
  • Salt and freshly ground black pepper
  • 3/4 cup grated Parmesan, plus more for broiling

 Directions

Preheat the oven to 375 degrees F.

In a saucepan, heat up the cream with a sprig of thyme, chopped garlic and nutmeg.

While cream is heating up, butter a casserole. Place a layer of potato in an overlapping pattern and season with salt and pepper. Remove cream from heat, then pour a little over the potatoes. Top with some grated Parmesan. Make 2 more layers. Bake, uncovered, for 35-45 minutes. Sprinkle some more Parmesan and broil until cheese browns, about 5 minutes.
