Here's a recipe for the most anticipate meal period of the week

Sometimes, getting out of the house on a Saturday or Sunday morning, after a long week at work, to go wait in a crowded restaurant for a table does not seem like something you want to deal with. Too bad you promised your best friend you would meet up with her to meet her new boyfriend. She has been craving poached eggs and a bellini for the entire week. There is a solution to all of your problems: make brunch at home! It doesn't have to be that expensive or time consuming. Here is an idea meant to inspire you.

Poached Eggs with Ham, Chipotle Pepper Sauce, Corn and Black Bean Salsa over a Cheddar Jalapeno Biscuit

Note: If you do not like spicy food, cut down on the amount of spice and use a sweeter pepper.

 

 

How to Poach an Egg:

Simmer water. Add a drop of Distilled White Wine Vinegar, this will help make the eggs coagulate. Stir water to create a whirlpool effect. Crack your egg in a separate bowl then add to the water. It is good to add it from the bowl just in case the egg is rotten. The smell of a cooked rotten egg will turn your homemade brunch into a homemade disaster. 

If you like a runny egg, do not let it cook for that long. Remove egg carefully with a slotted spoon and set aside.

Cheddar Jalapeno Biscuit

Ingredients

2 c all-purpose flour
1 1/2 t baking powder
1 t salt
1/2 t baking soda
1/8 t ground black pepper
1/3 c vegetable shortening, cold
3/4 c grated Cheddar cheese
3 chopped jalapeno pepper (seeded and diced)
3/4 c buttermilk

Directions

Pre-heat oven to 450 degrees

Sift dry ingredients together. Mix Shortening in with the blender until it resembles fine crumbles. Stir in cheese and jalapenos. Add buttermilk to moisten dry ingredients. Be careful, do not over mix.

Chipotle Pepper Sauce 

Ingredients

5 chipotle peppers
1 can tomato paste
1 T minced garlic
1 T minced onion
1 T cayene peppers
Black pepper, to taste
Lemon Juice, to taste
2c vinegar

Directions  

Saute your onions, peppers and garlic in olive oil. Stir in the tomato paste and half the vinegar. Bring to boil and add the rest, to taste.

Corn and Black Bean Salsa

Ingredients

1 can sweet corn
1/2 can black beans
1 small onion, chopped
2 medium tomatoes, chopped
2T minced fresh cilantro
Lime Juice, to taste
1 T finely chopped green pepper
1 T finely chopped orange bell pepper
1 jalapeno pepper, seeded and minced
1 t honey
1/2t red pepper flakes 
Salt and Black pepper, to taste
 

 

Directions

Mix all ingredients together in a bowl the night before and put in the fridge. Heat up in a pan before serving. 

Plating: Cut the biscuit in half. Put Ham on top then add the poached egg. Drizzle the sauce over the egg and top with the corn and black bean salsa. Put an avocado on the side. 

Get some fresh orange and grapefruit juice, along with some sparkling wine and get the party started.
