How-To: The Hearty Heart Attack Breakfast
Wake up to steak, eggs and salsa!

Breakfast is perhaps the best meal of the day. So good, in fact, that plenty of diners have all-day breakfast. Something about the eggs just brings a smile to almost everyone's face. This variation on the traditional steak and eggs breakfast is great for any time of day, though be sure to bring your appetite because this is definitely not for the faint of heart.




STEAK, FRIED EGGS AND SALSA with Sweet Potato Home Fries

Ingredients

  • 1/2 lb skirt steak
  • 2 large eggs
  • 4 tbs oil (separated) 
  • salt, pepper and garlic powder to taste

For Salsa

  • 3-4 ripe vine tomatoes chopped
  • 4 garlic cloves minced
  • 1/4 cup of chopped cilantro
  • 1.5 tbs of fresh lime juice
  • 2-3 drops of habanero sauce
  • salt and pepper to taste

For Home Fries

  • 2 sweet potatoes finely chopped
  • 1/4 medium onion minced
  • 2 garlic cloves minced
  • 1/2 tbs cilantro finely chopped.
  • 1 tbs oil
  • salt and pepper to taste

Directions

  1. Combine all the ingredients for the salsa and set aside. This will allow the flavors to marinate. 
  2. Sprinkle the skirt steak with salt, pepper and garlic powder set aside.
  3. Heat up the oil in a frying pan until hot.
  4. Add onions and garlic to the frying pan and cook until the onions have just gotten tender, about 3-4 minutes.
  5. Add sweet potatoes and mix all ingredients together until well incorporated. Cook until the sweet potatoes are tender, about 10-15 minutes.
  6. Add cilantro and cook for an addition 2 minutes.
  7. Remove the potatoes from the frying pan onto a plate and cover.
  8. Add 1 tbs oil to the same frying pan and heat on high heat until oil is hot
  9. Reduce heat to medium then put steak in pan.
  10. Cook evenly on both sides to desired doneness: 5 minutes for rare, 8 minutes for medium-rare, 10 minutes for medium, 13 minutes for medium-well, 15 minutes for well-done.
  11. At the same time, heat up some oil until hot in another frying pan.
  12. Tilt the pan to one side, collecting all the hot oil and break open an egg into the oil. Add salt and pepper to taste.
  13. Cook until the edges of the egg whites have become a nice golden-brown color and remove from the frying pan onto a plate.
  14. Repeat the process for the second egg.
  15. Once the steak is done, remove from heat and place onto the plate with the home fries. Place the eggs on top of the steak and then top with salsa.
