InStyle magazine has been my savior this Thanksgiving season. They have given me so many ideas it is sick. Now I didn't know that other people knew about the vegetable Kale. It is crispy, a little bitter and delicious. Now when I turned the page in one of my favorite magazine's to find this recipe, I almost passed out.
It's the perfect side dish for your Thanksgiving meal and possibly any other meal you could ever make. 'Cause c'mon we all need a little green on the side to regulate things. So here we go...
Kale and Feta Salad
2 large bunches of Tuscan Kale
2 tbsp shallots, finely chopped
2 tbsp fresh lemon juice
1/4 tsp salt
black pepper to taste
3 tbsp olive oil
6 oz. crumbled feta chese (to your taste)
First you have to clean your vegetables so give that Kale a good cleaning. After you're done, chop it into bite-sized pieces and get rid of the stems. In a small bowl, combine the shallots, lemon juice, salt and pepper and olive oil. Remember to whisk the olive oil in slowly to thicken the sauce. Then in a large salad bowl, toss the Kale with the dressing and add as much feta cheese as you like!
