Puree Your White Veggies And Add Bacon!
Cauliflower soup that screams healthy and hearty

So now that Halloween is out of the way, it's time for us to look at what's just around the corner, THANKSGIVING! My favorite time of the year. It is the best time to stock up on all that you can possibly eat in one sitting and then pass out for the rest of the day.

I'm a big fan of veggies and cauliflower happens to be one of my favorites. So here's a nice recipe for a cauliflower soup (with some bacon bits!) that's great for Thanksgiving or even just a fall dinner with the fam.

InStyle Cauliflower Soup

6 slices of bacon, chopped

2 cups onions, chopped

1 1/2 cups celery, chopped

6 garlic cloves, chopped

12 cups cauliflower (2 large heads) chopped in 1inch pieces

8 cups chicken broth

1 3inch cube of pecorino romano cheese

1 cup heavy cream

salt and pepper

crumbled bacon and fresh herbs for garnish

white truffle oil

First saute the bacon in a large saucepan over medium heat until golden brown. Set aside a few pieces for later (you'll crumble them as garnish).

Next, add onion, celery and garlic to the pan you were just using and cover. Cook until the veggies are soft and remember to stir occasionally. This should last about 7 minutes.

Then add the cauliflower, broth and cheese and bring to a boil. Bring the heat to low, cover and simmer until cauliflower is tender (about 20 minutes).

Puree the soup in batches in a blender then return to the pan. Add cream, let it simmer, (thin with more broth if needed) and season with salt and pepper.

Now you're ready to serve this delicious and nutritious treat!
