Founder Emma Schwartz discovered the delicacy as a kid, when her "violent" dairy allergy caused her to seek alternate fillings for the requisite ice cream cones of any happy childhood. Her young palate led her to bananas--a fruit whose natural starchiness and sweetness make it an ideal replacement for the sugar- and guar-gum laden cow stuff.
The dessert's genius is in its simplicity: frozen bananas pressed through a machine with the perfect touch to finesse it into a smooth, whipped product. No stabilizers, emulsifiers, or preservatives--just organic bananas.
And, of course, your preferred combination of Emma's homemade toppings and sauces, among them apple cider syrup, Nilla wafer dust, and peanut butter-agave cinnamon.
You can find Rob and Anna's at Brooklyn's Smorgasburg each Saturday. Just try to get there before the supply runs out--the world hasn't seen bananas sell so fast since Miss Chiquita hit the scene.
