The famous Seattle Pike Place Market features a cheesemaker
named Beechers. Sensing the love
affair New Yorkers have with cheese, founder and owner Kurt Beecher Dammeier decided
to bring his handmade cheeses to the East coast. Slated to open in February 2011, the Beechers Handmade Cheese company will have 8,000 square feet of space in which to make and sell its
famously delectable dairy creations.
A below-ground floor will have, quite appropriately, a wine bar and
cheese cave used for aging the cheeses made on site.
There are certainly many cheese shops that have some great offerings, but what makes this different is the awareness of the cheese-making process. Because the location will include a glassed-in cheese-making room, customers will be able to witness the craftsmanship that goes into making an artisan product.
Beechers is best known for their cheddars, especially their Flagship cheese- a cross between cheddar and gruyere. They will sell over a dozen different types of cheese at the Flatiron location along with other products like their famous frozen macaroni and cheese.
The retail store will also act as a marketing tool. Restaurants and supermarkets can order cheese through Beechers, so if you don't make it to their store you still might be able to taste some of their creations in your favorite wine bars and restaurants around the city.
