This recipe makes a dozen cupcakes.
Red Velvet Cupcakes
1 cup soy milk (or other non-dairy milk)
1 teaspoon apple cider vinegar
1 1/4 cup all-purpose flour
1 cup sugar
2 tablespoons cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 ounce red food coloring
2 teaspoons pure vanilla extract
Preheat oven to 350˚F.
Line cupcake pan with cupcake liners.
Add the vinegar to the soy milk and set aside to curdle.
Sift flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
Add vegetable oil, food coloring, and vanilla extract to the curdled soy milk, and mix.
Pour liquid ingredients into the dry ingredients, and mix.
Fill cupcake liners 3/4 full and bake for 20 minutes, or until a wooden toothpick comes out clean.
Let cool, before frosting.
Cream Cheese Frosting (Vegan)
4 ounces of vegan cream cheese, such as Tofutti brand
5 tablespoons vegan soy butter, softened
1/2 teaspoon pure vanilla extract
1 1/2 cup powdered sugar
With an electric mixer, beat the cream cheese and butter. Once creamy, add the vanilla and sugar and continue to beat. If it's not thick enough, add 1/4 cup more of powdered sugar and beat. Continue adding little amounts of powdered sugar until you reach the desired consistency.
